    The other day I threw this together as an experiment and I highly recommend it if you are looking for something really good and different. Best to all.(This was just an experiment with no original recipe. I hope my directions were clear.)

    List of Ingredients




    8 oz. cream cheese, room temperature
    3/4 cup sugar
    1 tsp. vanilla
    12 oz. whipping cream (unwhipped)
    1/2 tsp. cinnamon
    Pinch of nutmeg
    1 tsp. Baileys Irish Cream liquor
    Fresh strawberries, halved (enough to cover top of your pie--sorry didn't measure)

    Crust
    1 1/2 cups Graham crackers, finely crushed
    2/3 stick margarine or butter, melted (Do not use too much margarine or crust will become hard once it is refrigerated)
    1/4 cup sugar
    Vanilla extract, about 1/2 tsp. (mix with melted margarine and then mix with Graham cracker/sugar mixture)

    Mix cream cheese sugar and vanilla extract until nice and fluffy. Set aside. Pour whipped cream in mixing bowl and add cinnamon, nutmeg and liquor. Beat until nice and fluffy. Fold entire amount into cream cheese mixture.

    To make crust mix sugar and Graham cracker crumbs. Slowly add melted margarine as you stir crumbs. Mixture should be slightly moist. Once mixed, pat crumbs into pie plate making sure thee is an even distribution. Spoon cream cheese mixture into crust. Place plenty of strawberry halves on top. Put pie in fridge to allow filling flavors to mix (if you can wiat that long. Just before serving, lightly sprinkle strawberries with powdered sugar.

    NOTE: This recipe will make extra filling, so you will definitely have enough to make an extra mini pie or two.
