List of Ingredients
- 1 can Rotel brand tomatoes
- 2 large tomatoes, dice with seeds and juice ( or 1 can diced w/ juice)
- 1/2 each: yellow, orange sweet bell peppers (can use green & red)
- 1 small onion, chopped fine
- Cilantro: handful (more or less to taste), minced
- 1-3 jalapenos, (with or w/o seeds, veins removed), minced
- 1/2 T chili powder (more or less to taste, adds heat)
- 1/2 T cumin
- 1 clove garlic, minced
- 1/2 lime, juiced
- Opt: *canned red jalapenos adds HEAT!
Instructions
- Clean, prepare and dice all.
- Eat right away or let rest so flavors come together.Serve with you favorite tortilla chips.
- NOTES: I blend in batches in a food processor to desired consistency. Holds up well in the fridge for several days.
