List of Ingredients
1 unbaked 9" pie crust
2 medium sweet onion, sliced thinly
2 T olive oil
3 eggs
1/2 C feta cheese, crumbled
1/2 t salt
1/4 t coursely ground pepper
1/8 t ground nutmeg
1/4 hot sauce
3/4 C half & half
1/2 C milk
1 T Dijon mustard
6 green onions, slice w/ tops
2 T chives, minced
1/3 C Parmesan cheese
Recipe
Preheat oven to 450°
Line unpricked pie shell w/ 2 layers of foil. Bake for 8 minutes.
Remove foil and bake for 5 minutes longer. Cool on a wire rack.
REDUCE oven temp to 375°
Sautee onions in oil until tender. Cool
In a food processor combine: eggs, feta cheese, salt, pepper, nutmeg and hot sauce. Cover and blend until smooth.
Gradually add milk and half & half. Blend.
Brush the inside of crust with mustard.
Sprinkle the crsut with green onions, chives and sauteed onions.
Carefully pour egg mixture over onions. Top with Parmesan cheese.
Bake at 375° for 30-40 minutes until center is set. check wiht knife.
Let set 5 minutes before slicing. Serve hot/warm.
