    Chipped Beef Casserole

    Recipe Introduction

    This is a childhood favorite of my husband & his 3 brothers. It's an acquired taste, it will grow on you. I have made it calorie friendly but cannot compromise on the cheddar cheese.

    List of Ingredients

    1 can condensed Cream of Mushroom Soup, 97% FF
    1 C milk, FF
    4 oz. sharp cheddar cheese, shredded
    2 oz. chipped beef (Hormel 95% FF Dried Beef)
    1 C uncooked elbow macaroni
    3 T onion, minced
    2 hard boiled eggs, chopped fine

    Recipe

    Prepare 4-6 hours ahead or overnight.
    In an 8x8 casserole:
    Mix milk & soup together. Warm together in microwave for 2-3 minutes.
    Add uncooked elbow mac noodles.
    Add all other ingredients to add casserole dish, combine well.
    Cover and put in fridge.

    Bake at 350° for 20 minutes covered, 25-40 minutes uncovered (45-60 minutes total baking time) until bubbly.
