    Recipe Introduction


    This particular recipe was entered in a Chili cookoff and won first place!


    List of Ingredients


    • 1-2# pork tenderloin
    • 3 small cans green chilis
    • 1 can Rotel brand tomatoes
    • 1 14oz. can diced tomatoes
    • 1/3 can red jalapenos (opt, very hot, adds HEAT)
    • 1 t cumin
    • 3 cans Joan of Arc Spicy Chili Beans
    • 1 medium to large onion, diced
    • 1-2 cloves garlic, minced
    • 1-2 C water
    • nonstick cooking spray or 2 T vegetable oil
    • Warm flour tortillas


    Instructions


    1. Trim and cut pork into bite size pieces
    2. Prepare deep pot with cooking spray or oil
    3. Cook pork until no longer pink, sprinkle with cumin, stir to coat, set aside
    4. Add oil if necessary and sautee onions & garlic until tender. About 5 minutes. Careful not ot burn the garlic. Put pork back into pot.
    5. Add chili beans, green chilis, tomatoes, jalapenos.
      Stir to combine, add water.
    6. Simmer several hours to desired tenderness & thickness.
      *At this point you can put in a crockpot.
    7. Serve with warm, rolled flour tortillas.
