    List of Ingredients


    • 1# salmon, cut into 4 pieces *best if 3/4 - 1" thick
    • 2 T dry white wine
    • 2 T shallots
    • salt & pepper
    • Topping:
    • 1/3 C low fat mayonaise
    • 1/3 C chicken broth
    • 1 T Dijon mustard
    • 1 T EV Olive Oil
    • 1 T lemon juice
    • 2 t each: fresh minced parsely, tarragon, chives


    Instructions


    1. Place fish on a lined and spray d baking sheet
    2. Sprinkle with wine, S&P both sides.
    3. Cover with foil and Bake for 15-20 minutes. Check fro doneness. Should be pink & flaky in thickest part.
    4. In the mean time: In a samll pan warm through TOPPING ingredients.
    5. Serve over hot salmon.
