Baked Salmon

List of Ingredients
- 1# salmon, cut into 4 pieces *best if 3/4 - 1" thick
- 2 T dry white wine
- 2 T shallots
- salt & pepper
- Topping:
- 1/3 C low fat mayonaise
- 1/3 C chicken broth
- 1 T Dijon mustard
- 1 T EV Olive Oil
- 1 T lemon juice
- 2 t each: fresh minced parsely, tarragon, chives
Instructions
- Place fish on a lined and spray d baking sheet
- Sprinkle with wine, S&P both sides.
- Cover with foil and Bake for 15-20 minutes. Check fro doneness. Should be pink & flaky in thickest part.
- In the mean time: In a samll pan warm through TOPPING ingredients.
- Serve over hot salmon.
