    Baked White Fish w/ Picatta Sauce

    Recipe Introduction


    YUM! Great on any white fish especailly Chilean Sea Bass. So what if it's an endangered species, it taste great!

    List of Ingredients




    1 1/2# firm white fish (sea bass, halibut)

    Piccata Sauce:
    1 clove garlic, minced
    1/2 C dry white wine
    3 T lemon juice
    2 T capers, drained

    Fish topping:
    1 T EVOO
    1/2 C Parmesan cheese, grated

    Recipe



    Preheat oven broiler
    Rub fish with EVOO on both sides.
    Place 3" under broiler and broil for about 3 minutes per side.
    Turn fish over and top with parmesan cheese. Booil for appeox. an additional 3 minutes.
    Broil until opaque at the thickest part and flakes apart with the touch of a fork.

    In the mean time:
    In a nonstick fry pan: sautee garlic in 1/2 t EVOO
    Add wine, lemon juice and capers.
    Boil uncovered, over med-high heat, until reduced by half.

    Serve topped with picatta sauce.
