    Meatloaf 101

    List of Ingredients


    • 4 slices white bread, torn into pieces (*whole wheat)
    • 2 1/2 # ground beef (* 1# ground beef & 1# ground pork)
    • 1 medium yellow onion, peeled
    • 2 cloves garlic, minced
    • 2 each: stalks celery, carrots, peeled
    • 1/2 C flat leaf parsely
    • 1 large egg, slightly beaten
    • 1 C ketchup, divided
    • 3 t dry mustard, divided
    • 1 T course salt
    • 2 t freshly ground balck pepper
    • 2 T brown sugar


    Instructions


    1. Preheat oven to 375°
      Serves 8-10

    2. Place bread in food processor and pulse until fine crumbs form. Transfer to a medium mixing bowl, add meat.

    3. Place onion, garlic, celery, carrots and parsley into bowl of food processor. Pulse until fine. With hands add to meat mixture, mix well.

    4. Add egg, 1/2 C ketchup, 2 teaspoons dry mustard, salt & pepper. Mix well with hands.

    5. Form into *2 loaves put into a sprayed baking dish OR put into a loaf pan (8x4x2)

    6. Combine: 1/2 C ketchup, 1 t dry mustard, and brown sugar; stir until smooth.

    7. Brush over meatloaf. Cook until meat thermometer reaches 160°, about 90 minutes/ full loaf or 45-60 mins/ 2 small loaves.

    8. Remove from pan, let cool for 5-10 minutes.
      (*Use tip of a pointy knife to cut into slices so it doesn't crumble)
