    I have been making this since I was a teen and now I have mom's spaetzel maker!

    List of Ingredients






    Spaetzle

    4 servings

    2 eggs
    2 tablespoons oil
    1 cup milk
    2 1/2 cups all-purpose flour
    2 1/2 teaspoons salt, divided
    1/4 teaspoon baking powder
    4 quarts water
    2 T butter, added to prevent noodles from sticking.

    Recipe




    Bring 4 quarts of water to a boil and add 2 tsp of salt.

    1. In bowl 1: Mix by hand, blend the eggs, oil, milk.
    2. In bowl 2: Stir the flour together with 1/2 tsp of the salt and the baking powder in a dry bowl.
    3. Blend this mixture into the liquid. The doughy mixture will follow your spoon. It will be thick and somewhat lumpy.
    4. Mix well and set aside for a moment.

    Using a spaetzle maker or spaetzle press squeeze the dough into the boiling water.
    5. Use about 1/3 of the dough for each batch or fill spaetzel maker 1/2 way.

    6. Slowly sqeeze the dough into the rolling water, When the dumplings float to the surface, they are done.
    Remove them with a slotted spoon and place in a colander. Stir in butter to prevent sticking.
