    CHICKEN BROCCOLI FRITTATA

    1 c. chopped fresh broccoli flowerets
    1/2 c. chopped cooked chicken
    1/4 c. chopped tomato
    1/4 c. chopped onion
    1/4 tsp. dried tarragon leaves
    1 T. low-calorie margarine
    1 c. egg substitute

    In 10-in nonstick skillet over medium heat, sauté the first 5 ingredients in margarine until broccoli is crisp-tender. Reduce heat to low. Pour egg substitute evenly into skillet over chicken mixture. Cover; cook for 5-7 minutes or until cooked on the bottom and almost set on top. Slide onto serving platter; cut into wedges.

    One serving equals: 187 calories (34% from fat)…7 gm fat (1 gm saturated)…7 gm carbohydrate…27 mg cholesterol…2 gm fiber…24 gm protein…308 mg sodium ++++ Exchanges: 3 lean meat…1 vegetable ++++ WWP: 4
