    Ravoli with Tomato Pesto (for 2)

    RAVOLI with TOMATO PESTO

    4 oz. frozen cheese ravioli
    1-1/4 c. coarsely chopped plum tomatoes
    1/4 c. fresh basil leaves
    2 tsp. pine nuts
    2 tsp. olive oil
    1/8 tsp. pepper
    1 T. grated Parmesan cheese

    Cook ravioli according to package directions; drain. Meanwhile, combine the next 5 ingredients in food processor. Process using on/off pulsing action just until ingredients are chopped. Serve over ravioli. Top with cheese.

    One serving equals: 175 calories (34% from fat)…10 gm fat (2 gm saturated)…10 gm protein…20 gm carbohydrate…59 mg cholesterol…164 mg sodium…3 gm fiber ++++ Exchanges: 1 vegetable…1 starch…1 meat…1/2 fat ++++ WWP: 4
