    BROILED SCALLOPS with HONEY-LIME MARINADE

    Plan ahead…needs to marinate at least 1 hour or overnight

    Serves: 2

    2 T. honey
    4 T. lime juice
    1 T. vegetable oil
    1/4 tsp. grated lime peel
    1 dash hot pepper sauce
    1/2 lb. bay, calico or sea scallops
    1 lime, cut into wedges

    Combine the first 5 ingredients in a large bowl. Rinse scallops and pat dry with paper towels; add to marinade. Marinate in refrigerator, stirring occasionally at least 1 hour or overnight.

    Preheat broiler. Arrange scallops and marinade in single layer in 2 individual broiler-proof dishes. Broil 4-in from heat source 4-7 minutes or until opaque and lightly browned. Serve with lime slices.
