    Fish with Mustard Sauce Over Steamed Spinach

    Low-Fat, Low-Cholesterol Cookbook - AHA

    FISH with MUSTARD SAUCE OVER STEAMED SPINACH

    Serves: 4

    4 fish fillets (sole or flounder) about 5 oz., each
    1/4 c. prepared low-fat ranch dressing
    1-1/2 T. prepared yellow mustard
    3 T. plain nonfat yogurt
    1/2 lb. fresh spinach

    Rinse fish and pat dry. Arrange in glass baking dish. Mix the next 3 ingredients. Spoon evenly over fillets. Bake at 400ºF until fish flakes easily with a fork. (About 10 minutes per inch of thickness at thickest point.

    Meanwhile, remove tough stems from spinach and rinse. Heat a nonstick skillet over medium-high until hot. Add spinach; stir-fry just to wilt the leaves, about 30 seconds.

    Serve fillets over a single layer of spinach on individual plates. Serve immediately.

    One serving equals: 128 calories…22 gm protein…6 gm carbohydrate…2 gm fat (1 gm saturated)…63 mg cholesterol…353 mg sodium
