    FISH DIVAN W/ LEMON SAUCE

    (Makes 6 servings)

    1 (10-ounce) package frozen broccoli spears
    1 1/2 pounds fish steaks or fillets, 3/4- to 1-inch thick (firm white fish such as haddock, halibut or orange roughy)
    3 tablespoons reduced-fat margarine

    Lemon Sauce:
    1/2 cup nonfat sour cream
    1/2 cup nonfat mayonnaise
    1 teaspoon prepared mustard
    2 teaspoons lemon juice
    Paprika (optional)

    Cook broccoli in microwave 7-8 minutes on high in glass dish covered with lid or plastic wrap (punch hole in center of plastic wrap). Remove from oven and let stand while cooking fish.

    Place margarine in glass baking dish and microwave on high 1 minute or until melted. Dip fish steaks or fillets into melted margarine and turn to coat each side.

    Place fish in buttered dish, being careful to place thicker pieces toward outside edges. Cover with plastic wrap and punch hole in middle. Cook on high 7-8 minutes or until fish flakes when touched with a fork. Turn dish once during cooking. Let stand covered for 5 minutes.

    To make lemon sauce, combine sour cream, mayonnaise, mustard and lemon juice in a 2-cup measuring cup and stir.

    Microwave on medium (50 percent power) for 5 minutes, or until heated through. Stir once during cooking.

    To serve, place broccoli on serving plate; place fish on top of broccoli spears and lemon sauce over fish and broccoli. Sprinkle with paprika if desired.

    Nutrition analysis per serving: 212.5 calories; 7.895 grams fat; 62.36 milligrams cholesterol; 200 milligrams sodium; 35 percent of calories from fat.
