    OYSTER FRITTERS

    Yield: about 20 fritters (2 per serving).

    1 cup pancake mix
    1 teaspoon baking powder
    1 pint oysters -- undrained
    Egg substitute equivalent to 1 egg
    2 tablespoons finely chopped onion
    Pepper to taste
    1/4 cup vegetable oil

    Combine first 5 ingredients, mixing well; add pepper to taste. Drop mixture by tablespoonfuls into hot oil. Fry until brown on one side; turn and fry until done. Drain well on paper towels. Serve fritters hot.

    2 oysters equals: 135 Calories; 8g Fat (50.8% calories from fat); 5g Protein; 12g Carbohydrate; trace Dietary Fiber; 37mg Cholesterol; 317mg Sodium. ++++ Exchanges: 1/2 Starch; 1/2 Lean Meat; 1 1/2 Fat ++++ WWP: 3
