    Carrots and Sweet Potatoes a'l'Orange

    8 servings

    2 large sweet potatoes (yams are better) peeled and thinly sliced 5 1/2 cups
    1 cup thinly sliced carrots
    1/2 cup orange juice
    1 tsp cornstarch
    1 T. water
    1 tsp. grated orange peel
    1 tsp. lemon juice
    1/4 tsp. freshly ground pepper
    2 T. chopped fresh tarragon...or... 2 tsp dried
    2 T. chopped toasted pecans.....(brown on baking sheet at 375º for 7 to 10 minutes)

    Place vegetable steamer in large pot or Dutch oven. Fill pot with water to just below steamer. Bring water to a boil over medium high heat. Add sweet potatoes and carrots. Cover and steam 10 minutes or until tender. Drain and place in a large bowl.

    In large saucepan, bring orange juice to a boil over medium heat.

    In small bowl, combine cornstarch and water, stir into orange juice. Stir in orange peel, lemon juice and pepper; cook, stirring 4 to 5 minutes or until mixture begins to thicken.

    Add sauce and tarragon to sweet potato mixture; toss to combine and sprinkle with nuts.

    One serving equals: 75 calories 1.5 gm fat 1 g protein 15 g carbohydrate 15 mg sodium no cholesterol 2 g fiber ++++ WWP: 1
