    Low-Fat Greens with a Bite

    Serving Size: 4

    1/4 cup Vegetable broth
    1 teaspoon olive oil
    2 cloves garlic -- chopped
    1/4 cup onion -- chopped
    1 Tablespoon prepared mustard
    2 Tablespoons prepared horseradish
    6 cups greens (collards, kale, mustard, etc.) -- shredded
    1/4 cup low-fat sour cream -- optional

    Briefly sauté garlic and onion over low heat in broth and olive oil Stir in mustard, horseradish and raw shredded greens: Cover and cook over low heat till wilted, stirring occasionally to prevent burning.

    Makes a great accompaniment for veggie burgers or cooked beans.
