    TOMATOES AND CUCUMBER ICE
    Cool and unusual--sliced tomatoes filled with icy cucumber puree.

    WW Points
    Serves 6.

    2 medium cucumbers (unpeeled)
    1/4 cup white wine vinegar
    1/8 teaspoon salt
    1/4 teaspoon pepper
    2 teaspoons gelatin powder
    1/4 cup cold water
    6 medium tomatoes
    Lettuce leaves

    Quarter cucumber lengthwise; remove seeds. Pulse in a blender or food processor or chop very finely. Add vinegar, salt, and pepper.

    Soak gelatin in cold water for five minutes. Place over hot water to dissolve. Mix gelatin with cucumber mixture; pour into a freezing tray. Freeze until firm. Transfer to a chilled bowl; beat well. Return to tray and freeze again.

    Slice tomatoes into six wedges, leaving attached at the base. Place each tomato on a lettuce leaf; put a scoop of cucumber ice in the center of each.

    Per serving: 75 Calories, 1 gm Fat, 0 mg Cholesterol, 18 gm Carbohydrates, 3 gm Fiber, 3 gm Pprotein, 64 mg Ssodium. ++++ WWP: 1
