    CHICKEN & SPANISH RICE
    No carbohydrate analysis available
    YIELD: 5 servings

    1 C. onions, chopped
    3/4 C. sweet green peppers
    2 t. vegetable oil
    1 C. tomato sauce
    1 t. parsley, chopped
    1/4 t. black pepper
    1 1/2 t. garlic, minced
    5 C. white rice, cooked in unsalted water
    3 1/4 C. chicken breast, cooked (skin and bone removed), diced

    In large skillet sauté onions and green peppers in oil for 5 minutes on medium heat. Add tomato sauce and spices. Heat through. Add cooked rice and chicken and heat through.

    One 1-1/2 cup serving equals: Calories, 406; Magnesium, 57 mg; Total Fat, 6 gm (Saturated Fat, 2 gm); Potassium, 529 mg; Calcium, 45 mg; Cholesterol, 75 mg; sodium, 367 mg.
