    SAUSAGE & APPLE RISOTTO
    WW Points
    Yield: 7 servings

    Olive oil-flavored vegetable cooking spray
    1 pound turkey breakfast sausage links
    1 tablespoon water
    1 1/2 cups chopped onion
    1 cup chopped sweet red pepper
    1cup chopped fresh crimini mushrooms...(couldn’t find Crimini so chopped up some Portabella)
    1 medium apple, peeled, cored, and chopped
    1 cup Arborio rice, uncooked
    1 1/2 cups canned no-salt added chicken both, undiluted
    1/4 cup dry white wine
    1 (14 1/2-ounce) can no-salt added whole tomatoes, undrained and chopped
    1 teaspoon dried basil
    1/2 teaspoon dried oregano
    1/4 teaspoon pepper

    Coat a large nonstick skillet with cooking spray; place over medium-high heat until hot. Add sausage and water. Cover and cook 2 minutes or until browned, turning frequently. Remove sausage from skillet; drain and pat dry with paper towels. Wipe skillet dry with a paper towel. Cut sausage into 1/2 inch slices. Remove and discard sausage casings, if desired: set sausage aside.

    Coat skillet with cooking spray; place over medium-high heat until hot. Add onion and next 3 ingredients; sauté 5 minutes or until tender. Add sausage, rice, and remaining ingredients to skillet. Bring to a boil; cover, reduce heat, and simmer 30 to 35 minutes or until rice is tender and liquid is absorbed.

    One serving equals: 289 Calories, Fat 9.7g, (Saturated Fat 2.4g), Protein 12.5g, Carbohydrate 35.2g, Cholesterol 41mg, Sodium 353 mg, Fiber 2.7g ++++ WWP: 6
