    Healthy Banana Oat Bread

    Healthy Banana Oat Bread
    24 servings or 2 loaves

    1-1/2 cups white flour
    1 cup whole-wheat flour
    1/2 cup oat bran
    2 cups quick oats
    4 teaspoons baking powder
    2 teaspoons baking soda
    1/4 teaspoon salt
    1/2 cup chopped nuts
    1/2 cup chopped dates
    3/4 cup sugar
    Egg substitute equivalent to 1 egg OR 2 egg whites
    1 eggs
    1/2 cup unsweetened applesauce
    1 cup skim milk
    2 cups mashed bananas, (about 4 or 5 medium size)

    Preheat oven to 350F; spray two loaf pans with non-stick cooking spray. In a medium size bowl, combine flours, oat bran, oats, baking powder, baking soda, salt, nuts& dates; set aside.

    In a large bowl, combine sugar and egg substitute and egg. Stir in applesauce, bananas& milk; combine thoroughly. Add dry ingredients to banana mixture; stir until blended.

    Pour batter evenly into prepared loaf pans. Sprinkle tops with cinnamon sugar; place in oven. Bake 50-60 minutes or until done.
