    “Diabetic Low-Fat & No-Fat Meals in Minutes” – M.J. Smith, R.D. - e-mail

    Serves: 36 (2 loaves)

    3 c. flour
    1/2 tsp. salt
    1-1/2 tsp. baking powder
    1/3 c. sugar
    Sugar substitute (Splenda) equivalent to 1/3 c. sugar
    2 tsp. vanilla
    1-1/2 c. skim milk
    3/4 c. vegetable oil
    1/2 c. frozen orange juice concentrate, thawed
    2 T. poppy seeds
    3/4 c. liquid egg substitute
    1-1/2 tsp. almond extract
    1/2 c. all-fruit raspberry preserves
    1 T. finely grated orange rind

    In a large bowl, combine first 11 ingredients. Beat for 2 minutes.

    Spread half of batter over the bottom of the loaf pans which have been coated with nonstick cooking spray.

    In a small bowl, combine preserves with orange rind. Drizzle preserves over batter. Spread remaining batter over the preserves.

    Bake at 350-F for 50-55 minutes or until a toothpick inserted near the center comes out clean. Remove from pan and cool on a wire rack.
