    Taste of Home’s Down-Home Diabetic Cookbook

    Serves: 5

    Egg substitute equivalent to 4 eggs
    1 c. skim milk
    Sugar substitute equivalent to 1 T. sugar
    1 tsp. vanilla
    1/4 tsp. ground nutmeg
    10 slices day-old low-fat French bread (3/4-in. thick)
    1 T. margarine, melted

    In a large bowl, beat the first 4 ingredients. Place bread in a 13-in. x 9-in. x 2-in. baking dish coated with nonstick cooking spray. Pour egg mixture over bread. Let soak for several minutes, turning bread once to coat.

    Freeze until firm. Package in airtight containers.

    To bake: Place bread on a well-greased baking sheet. Dot with margarine. Bake at 450-F. for 7 minutes; turn and bake 10-12 minutes longer or until golden brown.

    One 2 slice serving equals: 217 calories…437 mg sodium…1 mg cholesterol…30 gm carbohydrate…12 gm protein…5 gm fat…2 gm fiber ++++ Exchanges: 2 starch…1 lean meat
