    Yield: 6 slices

    2 T. reduced-fat margarine, melted
    2 tablespoons honey
    1/2 tsp. ground cinnamon
    Egg substitute equivalent to 3 eggs
    1/2 cup orange juice
    6 slices bread

    In a bowl, combine butter, honey and cinnamon. Pour into a greased 13-in. x 9-in. x 2-in. baking pan; spread to coat bottom of pan. In a shallow bowl, beat eggs, orange juice and salt if desired. Dip bread into egg mixture and place in prepared pan.

    Bake at 400° for 15-20 minutes or until golden brown. Invert onto a serving platter; serve with honey if desired.

    Nutritional Analysis: One slice equals 158 calories, 261 mg sodium, 1 mg cholesterol, 23 gm carbohydrate, 6 gm protein, 5 gm fat. ++++ Diabetic Exchanges: 1-1/2 starch, 1 fat.
