    1/2 cup onion -- chopped
    1 cup mushrooms -- chopped
    1 clove garlic -- crushed
    2 teaspoons reduced-calorie margarine
    10 ounces frozen spinach -- chopped
    1 cup egg beaters® 99% egg substitute
    1 cup 1% low-fat milk
    1 tablespoon all-purpose flour
    1 teaspoon dried basil
    1 teaspoon Tabasco sauce -- optional
    4 teaspoons nonfat parmesan cheese
    Pepper -- to taste

    Sauté first 3 ingredients, in the margarine, until soft. Allow spinach to thaw, squeeze moisture out of spinach, add to sautéed mix. Put in 9" pie pan.

    Mix remaining ingredients and pour over spinach. Bake 350 degrees for about 45 minutes, or until knife inserted in center comes out clean.
