    CHOCOLATE MARVEL CAKE

    1 c. strong coffee
    1 c. skim milk
    2 jars (4 oz., each) pureed prune baby food
    4 egg whites
    2 tsp. tsp. vanilla extract

    2 c. all-purpose flour
    2 c. sugar
    3/4 c. baking cocoa
    2 tsp. baking soda
    1 tsp. baking powder
    1 tsp. salt

    In a mixing bowl, combine first 5 ingredients; beat until well blended. Combine remaining 6 ingredients; add to coffee mixture. Beat for 2 minutes or until well blended (batter will be thin).

    Pour into two 9-in. round cake pans that have been coated with nonstick cooking spray and lightly floured. Bake at 350-F for 30-35 minutes or until a toothpick inserted near the center comes out clean. Cool for 10 minutes; remove from pans to wire racks to cool completely.

    FROSTING:
    6 T. margarine, softened
    2-2/3 c. confectioners' sugar
    1/4 c. baking cocoa
    2 T. skim milk
    2 T. strong brewed coffee
    1 tsp. vanilla extract

    In a mixing bowl, cream margarine, sugar and cocoa. Gradually add the milk, coffee and vanilla, beating well. Frost between layers and top and sides of cake.

    Nutritional Analysis: One serving equals: 306 calories, 614 mg sodium, trace cholesterol, 64 gm carbohydrate, 4 gm protein, 5 gm fat. Diabetic Exch. 3 starch, 1 fruit, 1 fat.
