    Plan ahead...needs to chill 30 minutes.
    Makes about 6 dozen.

    - 1/2 cup margarine, at room temperature
    - 1/4 cup sugar
    - Sugar substitute equivalent to 3/4 c. sugar
    - 1 egg, at room temperature
    - 1-1/2 teaspoons caraway seeds
    - Grated rind of 1/2 lemon
    - 2 tablespoons lemon juice
    - 2-1/2 cups sifted flour
    - 1/4 teaspoon baking soda

    Cream butter and sugar; beat until light and fluffy. Add egg substitute; beat well. Add caraway seeds, lemon rind, lemon juice, and sifted dry ingredients. Mix well.

    Shape dough into a roll 2 inches in diameter. Chill 30 minutes. Preheat oven to 400 degrees. Cut dough into thin slices. Bake on a greased cookie sheet 10 minutes.

    Per serving: 31 calories, 1 gram fat, Trace cholesterol, 3.9 grams carbohydrates, trace fiber, 1 gram protein, 16 milligrams sodium.
