    Yield: about 72 cookies

    1 cup margarine, softened
    1 cup sugar
    Egg substitute equivalent to 2 eggs
    3 cups all-purpose flour
    1 teaspoon baking soda
    6 ounces lemonade, frozen concentrate -- thawed, undiluted, and divided
    Sugar

    Cream margarine and 1 cup sugar until light and fluffy. Add 1/2 of Egg substitute at a time, beating well after each addition. Combine flour and soda; stir into margarine mixture alternately with 1/2 cup lemonade concentrate.

    Drop dough by rounded teaspoonfuls on ungreased cookie sheets. Bake at 400 degrees F. for 7 to 8 minutes or just until edges of cookies are lightly browned.

    Remove from oven; brush each cookie lightly with reserved lemonade, and sprinkle each with sugar. Cool cookies on wire racks.
