Sugar Cookies
Source: Serves 24
1 cup sugar
1/3 cup margarine, softened
Egg substitute equivalent to 1 egg
2 tablespoons fat-free milk
1 teaspoon vanilla extract
2 cups all-purpose flour
2 teaspoons baking powder
1/8 teaspoon ground nutmeg
Vegetable oil spray
In a large bowl, cream sugar and margarine. Beat in egg substitute, milk, and vanilla. In a medium bowl, sift together remaining ingredients except vegetable oil spray. Gradually beat into sugar mixture.
Cover and refrigerate dough until chilled thoroughly, about 2 hours.
Preheat oven to 375 degrees F. Spray baking sheets with vegetable oil spray. Form dough into about 48 balls 1 inch in diameter; put on baking sheets. Lightly press thumb in center of each cookie. Bake for 8 minutes, or until light brown. Remove cookies from baking sheet and let cool on rack.
