    Serves: 2

    Egg substitute equivalent to 4 eggs
    1 T. snipped fresh chives, Italian parsley, or chervil
    1/8 tsp. pepper
    1/4 c. (1 oz.) shredded sharp cheddar cheese
    1 c. fresh spinach leaves
    Sweet Pepper Relish (see below)

    Spray nonstick skillet with nonstick cooking spray. Heat over medium heat. Beat the first 3 ingredients, until frothy; pour into skillet. Cook, uncovered, for 4-5 minutes or until eggs begin to set. Do Not Stir.
    As eggs set, run spatula around edge of skillet, lifting eggs so uncooked portion flows underneath. When eggs are set but still shiny, sprinkle with cheese. Top with 3/4 c. spinach and 2 T. Sweet Pepper Relish. Reserve remaining relish for another use. Serve with fresh fruit if desired.

    SWEET PEPPER RELISH
    2/3 c. chopped sweet red pepper
    2 T. finely chopped onion
    1 T. cider vinegar
    1/4 tsp. black pepper

    Combine all ingredients, stir well.

    Nutritional Analysis: One serving equals: 121 calories…16 gm protein…7 gm carbohydrate…3 gm fat (2 gm saturated)…10 mg cholesterol…3 gm fiber…232 mg sodium
