    Serves 4

    Vegetable oil spray
    1 pound fresh or frozen scallops, thawed
    1/2 cup nonfat buttermilk
    2 tablespoons snipped fresh cilantro
    2 tablespoons fresh lime juice (1-2 medium limes)
    1/4 teaspoon pepper
    1/2 cup plain dry bread crumbs
    Dash of paprika
    Vegetable oil spray
    2 tablespoons fresh cilantro leaves
    4 lime wedges (optional)

    Preheat oven to 400 degrees F. Lightly spray a 9-inch round or square baking dish with vegetable oil spray. Rinse scallops and pat dry with paper towels. Whisk together buttermilk, snipped cilantro, lime juice, salt, and pepper in a small, shallow bowl. Soak scallops for 10 minutes.

    Put bread crumbs on plate or in a shallow bowl. Roll scallops in crumbs. Shake off excess. Arrange scallops in a single layer in the baking dish. Sprinkle with paprika. Lightly spray scallops with vegetable oil spray.

    Bake for 10 to 13 minutes, or until scallops are opaque.
    To serve, sprinkle scallops with cilantro leaves and garnish with lime wedges.
