    Grill or Broil Makes 6 skewers

    6 small red potatoes, unpeeled, halved
    1 medium zucchini, unpeeled, cut crosswise into 12 slices
    12 whole, medium button mushrooms
    1 large red bell pepper, cut into 12 chunks
    3 tbsp. red wine vinegar
    3 tbsp. apple juice
    2 tbsp. chopped, fresh basil
    1 tbsp. reduced-sodium soy sauce
    1 tbsp. Dijon mustard
    1 tbsp. honey
    2 tsp. olive oil
    2 cloves garlic, minced
    1/4 tsp. black pepper
    6 metal skewers

    Steam potatoes for 6 to 7 minutes, until tender. Combine cooked potatoes with remaining vegetables in a large bowl...In a small bowl, whisk together vinegar, apple juice, basil, soy sauce, mustard, honey, olive oil, garlic, and pepper. Pour marinade over vegetables. Stir vegetables to coat them evenly with marinade. Cover and refrigerate for 2 hours. …..

    Thread vegetables onto skewers. Grill over medium-high heat for 10 to 15 minutes, or until vegetables are tender-crisp. Turn vegetables once or twice during cooking, and baste with extra marinade.

    To broil, place kebobs on broiler pan and broil 4 to 6 inches from heat source for about 5 minutes per side.
