    CURRIED PORK & SLICED PEARS

    Yield: 4 servings

    1 lb. Pork tenderloin *
    Nonstick cooking spray
    3/4 cup Water
    3/4 cup Unsweetened orange juice
    2 1/2 tsp. Cornstarch
    1 tsp. Sugar or sugar substitute
    1 tsp. Grated orange rind
    1 tsp. Curry powder
    1/8 tsp. Cinnamon
    1/8 tsp. Ground cloves
    2 med. Pears **
    1 tbsp. Minced fresh parsley

    * Cut tenderloin into 1/2-in. thick slices.
    ** Peel and core pears and cut into 1/2-in. thick slices.

    Brown pork in a large skillet coated with cooking spray; remove to a serving platter, and keep warm.

    Combine next 8 ingredients; stir well. Add to skillet; cook over medium heat, stirring constantly, until thickened and bubbly. Reduce heat to low, and add pear slices. Cook sauce 5 minutes or until pear slices are tender. Return pork to skillet. Spoon sauce over pork, and cook an additional 2 minutes or until thoroughly heated.

    Transfer mixture to serving platter, and garnish with parsley.
