    Yield: 16 muffins

    1/2 c. flour
    1/2 c. cornmeal
    1 T. sugar
    2 tsp. baking powder
    1/4 tsp. salt
    1/4 c. egg substitute
    1/2 c. fat-free evaporated milk
    2 T. canola oil

    In a bowl, combine the first 5 ingredients. Add egg substitute, milk and oil; stir just until moistened. Fill miniature muffin cups coated with nonstick cooking spray three-fourths full.

    Bake at 400-F for 10-12 minutes or until a toothpick inserted near the center comes out clean. Cool for 5 minutes before removing from pans to wire racks.

    One muffin equals: 58 calories…2 gm fat (0 saturated)…0 cholesterol…82 mg sodium…8 gm carbohydrate…0 fiber…2 gm protein ++++ Exchanges: 1/2 starch
