    List of Ingredients




    2 lbs. red potatoes (about 6 medium), quartered
    1/2 c. water
    1/2 c. light mayonnaise or salad dressing
    1/4 c. low-sodium chicken broth
    2 tsp. dried oregano
    1/2 tsp. garlic salt
    1/2 tsp. onion powder

    Recipe



    Place the potatoes in an ungreased microwave-safe 2-qt dish. Cover and microwave on high for 12-14 minutes, stirring once; drain. Combine remaining ingredients in a bowl; add potatoes, mixing well.

    Cover and refrigerate for 1 hour. Drain, reserving mayonnaise mixture. Thread the potatoes onto metal or soaked bamboo skewers.

    Grill, uncovered, over medium heat for 4 minutes. Turn; brush with reserved mayonnaise mixture. Grill 4 minutes longer or until golden brown.

    NOTE: This recipe tested in an 800-watt microwave

    NUTRITIONAL ANALYSIS: One serving equals: 167 calories; 307 mg sodium; trace cholorestrol; 21 gm carbohydrate; 4 gm protein; 7 gm fat. ++++ EXCHANGES: 1-1/2 starch; 1-1/2 fat.
