    HERB CHICKEN WITH ZUCCHINI AND PEPPER

    Serves: 4.

    List of Ingredients

    4 skinless, boneless chicken breast halves
    2 medium zucchini, cut into 1/2-inch slices
    1 red bell pepper, cut into 1-inch squares
    1/2 cup wine vinegar
    1/2 cup tomato juice
    1 tablespoon vegetable oil
    1 tablespoon chopped onion
    1 tablespoon packed brown sugar
    2 cloves garlic, minced
    1/2 teaspoon dried oregano
    1/2 teaspoon pepper

    Recipe

    Lightly flatten chicken breasts; cut each breast lengthwise into 3 strips. Place chicken in a bowl with zucchini and bell pepper. Combine vinegar and remaining ingredients in a cruet or jar with a cover. Cover; shake well. Pour marinade over chicken and vegetables. Cover; marinate in refrigerator 1 hour.

    Drain marinade into small saucepan. Bring to a boil; boil 1 minute. Thread chicken and vegetables alternately onto skewers; brush with marinade. Broil 3 to 5 inches from heat until chicken is cooked, 8 to 10 minutes; turn and brush occasionally with marinade.

    Per serving: 168 calories, 5 grams fat, 51 milligrams cholesterol, 10 grams carbohydrates, 2 grams fiber, 22 grams protein, 172 milligrams sodium.
