    HONEY MUSTARD CHICKEN

    List of Ingredients

    4 boneless skinless chicken breast halves (1 lb.)
    1 c, dry bread crumbs
    1 tsp. 'plus' 2 T. Dijon mustard, 'divided'
    3 T. honey
    2 T. REDUCED-FAT margarine

    Recipe

    Flatten chicken to 1/4-in. thickness. In a shallow bowl, combine bread crumbs and 1 tsp. mustard. In another, combine honey and remaining mustard. Dip chicken in honey-mustard mixture, then coat with crumbs.

    In a non-stick skillet over medium heat, cook chicken in butter on both sides until juices run clear, about 8 minutes.

    One serving equals: 338 calories, 583 gm sodium, 73 mg cholesterol, 35 gm carbohydrate, 21 gm protein, 9 gm fat. ++++ EXCHANGES; 4 very lean meat, 2 starch, 1 fat
