    TURKEY CUTLETS ala ORANGE

    Serves: 4

    List of Ingredients

    2 teaspoons olive oil
    1 pound turkey cutlets
    1/2 teaspoon salt
    1/4 teaspoon coarsely ground black pepper
    1/3 cup orange marmalade
    2 tablespoons red wine vinegar
    1 tablespoon grated, peeled fresh ginger

    1 small navel orange, cut into wedges, and parsley sprig for garnish

    Recipe

    In nonstick 12-inch skillet, heat oil over medium-high heat until hot. Add turkey cutlets; sprinkle with salt and pepper. Cook cutlets until they are lightly browned on the outside and just lose their pink color on the inside, about 2 minutes per side, turning once.

    Meanwhile, in small bowl, combine marmalade, vinegar, and ginger. Add mixture to turkey cutlets in skillet; heat to boiling. Garnish with orange wedges and parsley to serve.

    Each serving: About 220 calories, 27 g protein, 20 g carbohydrate, 4 g total fat (1 g saturated), 68 mg cholesterol, 45 mg sodium.
