    Banana Kiwi Pudding

    Banana Kiwi Pudding

    1-1/3 cups Cooked rice
    1-1/3 cups Skim milk
    1 tsp Vanilla extract
    Splenda Granular to equal 2 tablespoons sugar
    1 Ripe banana
    1/4 cup Whipping cream, whipped
    1/3 Kiwi fruit, sliced, for garnish

    Cook rice and milk in 2-quart saucepan over medium heat until thick and creamy, 5 to 8 minutes, stirring frequently.

    Remove from heat; cool. Stir in vanilla and sugar substitute. Just before serving, mash banana; fold banana and whipped cream into pudding. Garnish with kiwi fruit slices.

    Each serving provides 207 calories, 5 gm protein, 6 gm fat, 32 gm carbohydrate, 2 gm dietary fiber, 22 mg cholesterol, 49 mg sodium ++++WWP: 4.9
