    Plan ahead…needs to chill

    Serves: 6

    2 envelopes unflavored gelatin
    3 T. lemon juice
    4 c. cubed ripe cantaloupe
    1 T. sugar
    1 carton fat-free lemon yogurt
    Fresh raspberries, optional


    In a small saucepan, sprinkle gelatin over lemon juice; let stand for 1 minute. Cook over low heat until gelatin is dissolved.

    Place gelatin mixture, cantaloupes and sugar in a blender or food processor; cover and process until smooth. Transfer to a bowl, stir in yogurt. Spoon into individual dishes; chill until firm. Garnish with raspberries, if desired.

    One 1/2-cup (w/o garnish) equals: 90 calories.…40 mg sodium.…1 mg cholesterol….18 gm carbohydrate….5 gm protein.…trace fat ++++ Exchanges: 1 fruit…1/2 skim milk
