    No-Cream Strawberry Custard

    Plan ahead...needs to chill overnight. No-Cream Strawberry Custard

    Serves 4.

    • 7 tbsp. arrowroot powder
    • 2 c. apple-strawberry juice
    • 1/4 c. maple syrup
    • 2 tbsp. tahini (sesame butter)
    • 2 tsp. vanilla
    • 2 c. sliced fresh strawberries

    In food processor or blender, process arrowroot, juice, maple syrup, tahini and vanilla. Pour into medium saucepan and cook over medium heat, whisking constantly, 20 minutes or until thick.

    Line 4 (1/2-cup) custard cups with sliced strawberries, reserving any extra for garnish. Pour custard into cups and chill overnight to firm. Serve cold.
