    VICELESS RICELESS PUDDING

    Makes 4 servings.
    Creamy & filling, it's probably better for you than Mom's rice pudding

    1 cup skim milk
    1/2 cup plus 1 tbsp. couscous
    2 1/2 tbsp. brown sugar
    1/4 cup dark raisins
    1/4 tsp ground cinnamon
    1/3 cup non-fat vanilla yogurt

    Heat the milk in a small saucepan until just boiling. Stir in couscous, brown sugar, raisins, and cinnamon. Remove mixture from heat and cover with a tight-fitting lid. Allow to sit until milk is absorbed (about 10 minutes). Stir in yogurt and serve warm. Sprinkle top lightly with more cinnamon, if desired.

    Per serving: 180 calories, 0.4 g fat, 38.2 g carbohydrate, 6.7 g protein, 50 mg sodium 2 mg cholesterol
