    100 Low Fat Small Meals and Salads
    Makes About 1 Cup

    Juice of 1 large lemon
    1/4 cup champagne or white wine vinegar
    1 teaspoon Dijon mustard, or to taste
    2 tablespoons olive oil
    1 tablespoon finely minced shallots or scallions
    Freshly ground pepper to taste
    2 tablespoons capers, rinsed and drained

    Whisk together all ingredients, or combine in a jar with a tight-fitting lid and shake well. Refrigerate for at least 1 hour before using to allow flavors to blend.
