    Orange Romain Salad

    6 T. unsweetened pineapple juice
    3 T. cider vinegar
    2 T. water
    2 T. chicken or vegetable broth
    2 T. canola oil
    1 T. minced fresh basil...OR ...1 tsp. dried basil
    1 tsp. sugar
    1/2 tsp. garlic powder

    2 bunches romaine or red leaf lettuce, torn (about 2 cups)
    1 can (11 oz.) mandarin oranges, drained
    1/3 c, sliced almonds, toasted

    I a jar with a tight-fitting lid; combine the first 8 ingredients; shake well.

    In a large salad bowl, combine lettuce, oranges and almonds. Add dressing; toss to coat. Serve immediately.

    One 1-1/2-cup serving equals: 93 calories…6 gm fat (trace saturated)…0 cholesterol…23 mg sodium…9 gm carbohydrate…2 gm fiber…3 gm protein ++++ Exchanges: 1 fat…1/2 fruit ++++ WWP: 2.6
