    Poultry: Chicken, Pear, and Blue Cheese Salad

    Makes this salad quickly and easily by picking up deli rotisserie chicken. Exchanges
    Makes 4 servings.

    6 cups packaged torn mixed greens or mesclun
    10 to 12 ounces roasted or grilled chicken breast, sliced
    3/4 cup bottled reduced-calorie blue cheese salad dressing
    2 pears, cored and sliced
    Freshly ground black pepper (optional)

    In a large bowl, combine the torn greens, chicken, and salad dressing; toss gently to coat. Divide among four large salad bowls or dinner plates. Arrange pear slices on top of salads. Sprinkle with pepper, if desired.
