    Plan ahead....needs to chill for 1-2 hours

    Serves: 7

    2 c. uncooked elbow macaroni
    2 large carrots, cut into 1-in. strips
    1 c. snow peas, halved
    2 green onions with tops, sliced
    1/2 c. thinly sliced sweet red pepper

    Cook macaroni according to package directions; drain and rinse in cold water. Place in a large bowl; add remaining ingredients.

    DRESSING:
    1/2 c. fat-free mayonnaise
    1/2 c. nonfat sour cream
    1 T. cider or red wine vinegar
    1 T. lite soy sauce
    1/2 tsp. ground ginger
    1/4 tsp. pepper

    In a small bowl, whisk dressing ingredients until smooth. Pour over salad and toss to coat. Cover and refrigerate for 1-2 hours.

    One 1-cup serving equals: 139 calories, 216 mg sodium, 1 mg cholesterol, 27 gm carbohydrate, 5 gm protein, 1 gm fat. ++++ Exchanges: 1-1/2 starch, 1 vegetable.
