    LowFat MEDITERRANEAN SUMMER SANDWICHES

    List of Ingredients




    1 tsp. olive oil
    1/4 cup onions, chopped
    1 cup eggplant, sliced longwise 3/4-inch thick
    1 cup red pepper, cut into 1-inch pieces
    1 1/2 cups yellow summer squash, cut into 1-inch pieces
    1 cup zucchini, cut into 1-inch pieces
    2 cloves garlic minced
    1/4 cup red wine
    2 tsp. oregano fresh, chopped
    8 large cherry tomatoes, quartered
    2 tbsp. basil fresh, chopped
    1/8 tsp. salt
    1/8 tsp. black pepper
    4 oz. goat cheese
    4 pita bread rounds

    Recipe



    In a large nonstick frying pan over medium heat, heat the oil and sauté the onions for 5 minutes, or until soft. Add the eggplant, red peppers, squash, zucchini and garlic. Sauté for 5 minutes or until the eggplant and peppers are just tender. Add the wine and oregano and cook for 5 minutes, or until the liquid evaporates. Add the tomatoes and basil. Add salt and pepper to taste. Remove the pan from the heat. Slice each pita round in half for easier stuffing. Spread the goat cheese evenly inside each pita bread. Top each with the vegetable mixture. Serve immediately.
