Fruit Filled Acorn Squash
List of Ingredients
1 medium acorn squash
2 oz. dried apricots, chopped (about 6 whole)
1 tablespoon golden raisins
1 tablespoon currants
2 tablespoons apricot preserves
1 teaspoon water
dash of salt
1-2 tablespoons sliced almonds, toasted.
Recipe
Cut squash in half lengthwise, discard seeds and membranes. Place squash, cut side down, in a vegetable steamer. Place steamer over boiling water in a dutch oven - cover and steam for 20 minutes or until squash is tender.
While squash is steaming, combine remaining ingredients except almonds. When squash is tender, remove from steamer and spoon fruit mixture evenly into each squash half. Return to steamer for 5 minutes. Sprinkle with toasted almonds and serve.
