    List of Ingredients


    • 10 eggs
    • 1 lb of Italian Sausage
    • 1 small onion
    • 1/2 green pepper
    • salt and pepper
    • 3 slices of cheese american or cheddar (quartered) (4 if Erik is around -----> he loves cheese)


    Instructions


    1. Preheat oven to 350º

    2. Lightly grease a muffin pan.

    3. Cook sausage, onion and green pepper. Drain and let cool.

    4. Mix eggs together really good. Mix the meat mixture with the eggs. What I do for this part because I want the sausage to be in smaller chunks, I put all of it in a food processor, it's just easier for me.

    5. Pour egg/meat mixture into muffin pan, filling each about 1/2 way full.

    6. Place a quarter slice of cheese on top of each one and then fill the rest of the way up to the top.

    7. Place another slice of cheese on top.

    8. Cook for about 18 minutes or until brown on top.



    Final Comments


    These don't last long around here but they do freeze well when you can get them into the freezer (grin). I put 2 per baggy. We have put them between english muffins by cutting them in half or you can just eat them the way they are. Heat them up in the microwave for about 1 minute 30 seconds.
