    I enjoy ethnic foods with strong flavors. The first time I tried this my taste buds were surprised for the first time in years! A great summer snack or even better- pair with bruschetta and wine for dinner!

    List of Ingredients




    1/3 cup walnuts
    2 tbsp. honey
    1/4 cup balsamic vinegar
    3 tbsp. o.j.
    16 Belgium endive leaves
    16 small orange sections (I actually use clementines)
    1/3 cup goat cheese
    1 tbsp. minced chives
    1/4 tsp. black pepper

    Recipe



    350 degree oven- mix walnuts and 1 tbsp. honey and spread on baking sheet. Cook 10 minutes, stir halfway through. (I have also cheated by using honey roasted cashews!)

    Bring remaining honey, vinegar, and o.j. to a boil over high heat and then cook about 5 minutes.

    Mix all ingredients together and fill endive leaves with mixture. Chill before serving.
